Worrisome Update and Food Experiments

My cleaning lady didn't show up this morning, so I had to call to report that she missed two weeks.  I am paying for the cleaning service and the home health care through a county program.  Even though the rates I pay are heavily discounted, I still don't want to pay for no service.  I have no idea what happened with her and I really hate to see her go.  She did a wonderful job.  Wherever she is, I wish her well.  Those in charge of the program will find me a new cleaning person.  If the new cleaner is half as thorough as the other, I will be happy.

On another note, I saw some videos about canning bacon.  I already can bacon bits, but the videos were about canning bacon slices.  So in the interest of adding to my home canned goods stash, I ordered four pounds of bacon which should give me 8 pints.  I will give this a try over the weekend and let you know how it works. 

I have another food experiment going.  I made up two batches of baking powder biscuits.  One batch I cut and baked the normal way, put them in a freezer bag when cool and popped them into the freezer.  The idea was that when I want a biscuit or two I can grab a couple and heat them up for a meal.

  The second batch I rolled out, cut the dough into biscuits, put them on a parchment paper lined cookie sheet and froze them for about an hour.  Then I took the frozen raw biscuits and put them in a freezer bag and back into the freezer they went.  The theory is that I can take out as many as I want and bake them. 
 
  I will test both methods to see which one I like best.  It is sort of fun to test new ideas to see if they really work.

  1. I'd think a small toaster oven would be best, if you have one.

    1. I have one, Gorges, and I use it often when I have a small amount to bake or heat up. Saves heating up the entire apartment for a few biscuits.

  2. Sorry to hear that your cleaning lady was a no show again.
    Fun as always to hear about your food experiments.
    I went to my swim class this morning then spent the rest of the day at my apartment. Hopefully I didn't overdo and I was trying to be really careful. It's a water aerobics class that I really love. It's cooler today which has been nice. The dog and I have had the patio door open all day and have enjoyed the cool breeze.

    1. SJ...Her employer called me late this afternoon. She told me the cleaning lady had quit all of her clients due to some personal problems. I hope she finds some peace, poor thing. The company is working to get me another cleaner as soon as possible.

      We are having a cool-down here, too. Rain off and on. Windows open enough to let a lovely breeze into the apartment.

      Your swim class sounds like fun. I miss swimming, but I do have lots of nice memories of days spent at the lakes where I grew up. I wonder if mothers today have the same rule as mine did - no swimming for 1 hour after eating! That used to annoy me as a kid. All that time wasted when I could be happily splashing about in the water. :)

  3. I am sorry to hear about your cleaning lady. I hope that you are able to get another one who will be able to commit to a longer period of employment. It would have been nice for her to be able to at least call you to let you know there was a problem and that you were not that problem. Best wishes!

    1. Thanks, Sue...When her employer returned my call she said the lady quit due to personal problems. I am guessing that when in that state of mind, courtesy calls are likely the last thing she thought about. I hope she can get her life together, for she is a nice lady and a hard working one. Lucky for me, she did such a good job that there is very little I need to do to keep the place clean - so far. I'm sure the company will have someone here as soon as possible.

  4. I tried canning bacon, too. My directions called for including brown paper. It all went well and the bacon had good flavor. Except for the fact that it came out tissue paper thin and stuck to the paper, it was a success:) I have read since that you need to use thick cut bacon. Good luck, Julia

    1. Julia...I'm glad to hear you had success, other than the thin slices part, with your canning of bacon. I have just the regular sliced bacon for this experiment, so we'll see what happens. If I run into the same problem as you did, I will know to use the thick sliced next time. I dearly love bacon, so I hope it works. :)

    1. Linda...I am working on the bacon today, so it will be either tomorrow or Sunday when I do the biscuit test. I will post the results. I love biscuits, but hate having to stir up a batch every time I want some.

    2. I am in no hurry to see the biscuit results. At store they have plastic bags of frozen biscuits. I have never bought a bag, but people say they are delicious.

    3. Linda...It was the bags of frozen biscuits at the grocery that gave me the idea of trying the same thing at home. I hope it works.

      I see. I think about buying those. I do not make good biscuits. Besides, if I had delicious biscuits in the house, I would probably overeat them. So, I never bought them.

  6. Unemployment in MN is running around 2% give or take. So many folks are doing what is called ghosting. They get hired for one job, get hired by another company, and never call or show for the first one. My son at Best Buy said they are having people leave to go back to school, or a better paying job.

    fresh bake food is always a great way to start the day.

    1. Rob...I had not heard of ghosting. I don't think that's what happened here, for the last time I saw her it was obvious something wasn't right.

    I buy Yoder's bacon in cans, runs up to $19.00 for a single can now, used to be $120.00 for a case of 12. I hope your experiment works out.

    1. Harry...I received a card in the mail from the cleaning lady, apologizing for quitting so abruptly, saying she had some personal problems to deal with. So at least I know she didn't have an accident or something worse.

      I tried out a jar of the bacon. It gets a little mushy in the pressure canner, but if lifted off the paper with a spatula and onto a cookie sheet, it browns up real nice in the oven. I will do a post about it sometime this week. I looked up Yoders and found the cans contain 9 ounces of bacon. I canned mine in pint jars that hold about 7 ounces each. That figures out to about $2 per jar. I think I will stick to my home canned. :)
