I Shall Return

When I counted the cases of home canned food sitting on the floor and came up with an even dozen awaiting shelf space to put them, I decided I had procrastinated long enough on doing some much needed rearranging to accomodate them.  And Oldest Son (better known as my partner in crime when it comes to food storage) and I discussed yesterday on how to make the best use of the six cases of quart jars now stacked against a wall in my kitchen.  I have lots of pint jars full of beef, pork and chicken that was cut into one-inch pieces, but have very lttle canned in large pieces to use as roasts.  So the plan is to watch the grocery store sale ads and fill at least half of the quarts with meat.  Which will also need shelf space to store.

Considering that I move with the speed and grace of a herd of turtles and considering that at the same time I need to do an inventory to see just what I do have already and what I need to fill in the gaps, this project will likely take me the rest of the week.  I shall return Monday.

I still plan to do the experiments with dehydrating rice and pasta, but that has been postponed until next week.

Until then, pay attention.  There is so much going on around us these days and not much of it good.  Contine to pray and prepare, my friends.

  1. We will be happy to grant you whatever time you need to make your preparations. Will miss your posts, but first things first. We all need to prioritize our preparedness efforts. You are correct. The news isn't very positive unless you are anti-Trump/anti-USA. I would rather be a slow but sure prepper than not. Take care...CW

    1. CW...Feels like it might be getting down to the wire, so I decided I had better do the organizing that needs doing before my next grocery order. I want to fill in as many gaps as possible. I have already found stuff I forgot I had, so it is good to get this done now. No fun, though. :)

  2. I have the same empty jars looking at me. People are panicking and the food situation could get interesting. And yet, I've got to keep up with research and writing. Looking forward to canning myself ASAP. It's much less stressful.

  3. Vicki~ Do what needs doing. Remember to take breaks so you don't. Just finished drying another 4 pounds of yellow/green squash, diced and o'brian potatoes, white corn, peas and southwest veggie mix. My Husband made strawberry jam with the dried berries from my experiment. It's rather tasty in oatmeal and on toast. Started the next batch of veggies drying. The Checker at the bulk market almost cried when I asked her how she was holding up. She told me people had been yelling at her for not having what they wanted to buy. Seriously People don't blame the clerk for YOU not taking the time and common sense to PLAN for an Emergency. Red

    1. Red...Slow but steady seems to be working, along with the necessary breaks. The reorganizing just needed to happen and I have put it off far too long. You must have a good amount of dehydrated food put away by now. I wouldn't have thought to make jam from dried berries, but what a great idea! I haven't heard about any runs on the stores here, but I expect if people start paying attention, it is bound to happen. I feel sorry for the clerk. We seem to live in a society where folks blame everybody else for their own shortcomings. Common sense has left the building!

  5. Slow and steady progress will get lots done. Glad #1 son is on board and helping out and close by.
    Went to the store this morning after the tire store. All seemed normal = lots of staples on the shelves and not too many people shopping.

    1. SJ...Managed to get a good start on the reorganization today. Still have a bit more to do before stopping for the night. All seems calm in the stores here as well, but I doubt anyone is paying attention to what is going on around us. That may change, but I kind of doubt it. Nothing bad could ever happen here, dontcha know!

  6. I, too, move with the speed of a herd of turtles...lol. I have half-pints waiting and watching me procrastinate. I am going to can cole slaw. Then, a week later i will thaw to see how it does. Jackie Clay said slaw can be frozen.

    1. Linda...I have a recipe almost the same as Jackie's for cole slaw. I have never frozen it, but have always canned it. Really good stuff! I need to can up more as it is my 'go to' easy addition to a meal.

  8. We have been watching ads, and doing advance planning. See you next week. Don't forget Sunday we set clocks ahead by 1 hr. If you can open a couple of windows this weekend..temps her 50??

  10. i prefer brown rice was told it is oily so does not keep someone told me cook it and then dehydrate it will then keep have not done it due to huge changes in way of life but want to before rice becomes rancid hope you will try dehydrating a pound of the brown rice
    and report your findings
