Go With the Flow

Someone - I don't know who - once said, "We make plans.  God just laughs at us."  This is very true.

I had planned on discontinuing canning for a while to concentrate on other areas of preparation.  But my youngest son asked me to email him my wish list for Sam's Club.  He said he will pick up part of it for me soon and the rest when he and his brother go shopping in June.  Makes sense.  Less for him to have to haul up the stairs to my apartment at one time.

Much of my list is stuff for the freezer.  My chest freezer was nearly full, so something had to change in order to find room for the Sam's haul.

My kitchen table is now covered with 4 venison roasts, 2 pork roasts, 5 boneless pork chops, 18 lbs. of hamburger, 2 large turkey breasts and 2 grocery bags full of quart freezer bags of slaw/relish.  I had to stop there because my table is the only space available to let some of this start to thaw.  I'm kind of scared to find out what is lurking at the bottom of the freezer.

I believe my weekend is now taken up with the canning I wasn't going to do.  But there are times when we just have to go with the flow.  I need the freezer space.  Haven't a clue where I will store the jars of canned meat and slaw, but I am not about to let any of it go to waste.

In these uncertain times, it doesn't matter that there were other things I wanted to do this weekend.  What matters is that I need to do whatever is necessary to feed my family.  And if you think things will be just fine, you really need to take a look at the two videos posted over at "Thoughts from Frank and Fern."  If they don't wake us up to what is in store for us, I doubt anything will.

Pray and prep, my friends.  We need a whole lot of both.

  1. Vicki~ I know about plans. I had planned to rearrange items and update my inventory and woke with my right side knotted and in spasms. Be safe canning and I hope your Son can do the lifting for you.I sent that tracing video to Sean Hannity through his contact page, and a few others. In God's Safekeeping Red

    1. Hope you are feeling better, Red. I can manage getting jars in and out of the canner. Son comes in handy for reaching stuff on the bottom of the freezer or the top shelf of the cupboards. :)
      I'll have to keep an eye on the evening shows. Tucker Carlson might be another choice. He gets himself in trouble now and then by telling the truth. Take care.

  2. For one thing doing this stuff will keep you busy. We did a good job for stocking up as things turn bad. We know its only going to get worse. We still laugh at the price of fresh meat. Deb cooked up some chicken in the instant pot. chicken sandwiches on the dinner menu. Between stocking up, and moving out of the city, I feel like one very smart cookie.

  3. Vicki, it sounds like a winner. You can pace yourself over the weekend and do a little each day. You are setting a great example for others. Hoping I will be able to pressure can some asparagus as it is still producing well, and I already have quite an abundance of it in the freezer. I am like you in that there is no way I want any of it to go to waste. You take care...CW

    1. CW...Everything is thawed and in the fridge, waiting to be stuffed into jars tomorrow. No way can I let any of it go to waste. Asparagus sounds so good - haven't been able to lay my hands on any this spring. But I still have a few jars from last year that I am hoarding. :)

  6. Ms. Vicki, where are you (no, not your exact address, just generally) in relation to the riots going on? Just curious.

    One way I heard that phrase you mentioned was, “Man proposes, GOD disposes”. Just thought I’d toss that in.

    1. Matt...I am about 30 miles SW of Minneapolis. The riots are centered in downtown Minneapolis and St. Paul and are not likely to reach my area.

      "Man disposes, God disposes" is the phrase I was looking for but couldn't remember. So true, that.

    1. Thanks, sbrgirl...Pork and venison were canned yesterday and tomorrow - hamburger. Things have been quiet here so far. I hear there is a protest planned for tomorrow in the next town over and we will be keeping an eye on that. It appears there are a lot of outside agitators doing the lion's share of burning and looting. Those who are actually grieving what happened to Mr. Floyd are calling for peace. We just wait and see.
