Winter Wonderland and Vegetable Soup

Well, OK...So it is only maybe an inch of snow on the ground, but still...

The lovely lady who cleans my apartment didn't show up Wednesday as scheduled.  She called to tell me she was a bit under the weather.  So this morning she called again to tell me she was still down with some sort of respiratory problem and we decided she should just skip this week and get back on schedule next week.  The last thing I need is to be exposed to some bug going around.  I'm glad she had the good sense to call me rather than just showing up.  The poor thing sounded just awful on the phone.  I hope she gets to feeling better soon.

So now that my Friday is free, I am soon off to the kitchen to do some serious slicing and dicing.  My grocery order yesterday included the ingredients for a big stockpot full of vegetable soup.  Today I will prep the vegetables and tomorrow, combine them and can the soup.

I don't use a recipe as such, but just toss in what I like.  There are 6 one pound bags of frozen, mixed vegetables, two pounds of carrots, one bunch of celery, one small cabbage, about four pounds of potatoes and two large cans of crushed tomatoes.  These I cover with water and toss in a few beef bouillon cubes along with onion powder, garlic powder, celery seed and dried parsley. 

This makes a good soup base that can be eaten as is or if I want a more hardy soup, I just add some of my home canned beef or pork for a meal.  This is good thickened served over biscuits, too.  It has become a staple in my pantry.

So even though it is cold outside, it is a day of beautiful sunshine.  Even the  city streets are pretty with a new covering of snow.  Enjoy your day as I am enjoying mine.  :)

  1. Sounds like you have something to keep you out of mischief, Vicki. Cold, windy and rainy here, but after watching the wildfires in Kalifornia, I guess I won't complain (TOO much). Stay warm.

    1. Gorges...No shenanigans here today, We here in Minnesota love to complain about the winter cold, but I think I would rather have the ice and snow than the wildfires. I saw some news reports earlier about the devastation. Those poor people.

  2. We have had a bug of some kind going around. Hitting each of us not all at once, but 1 person every other day. Even poor Sammy has had it. As I write this it 5 here in Cokato. Stay warm, and soup on....

    1. Rob...I'm praying that nasty bug goes away and leaves your family alone. It seems like it is so much harder on the little ones. Soup is simmering and my little apartment is warm. I am a lucky woman. :)

    1. CW...After taking stock of my supply of canning jars, I have pretty much decided to freeze this batch of soup in quart sized freezer bags. A well stocked freezer is a thing of beauty, too. But you are right about looking at my shelves full of home canned goodness. They give me peace of mind, knowing none of my family will go hungry for a good, long time, should we need them. Quiet weekend ahead, with yarn and maybe an audio book or two to listen to. My idea of Heaven.

  4. Cheering you on from my little part of the world.

    MrDog and I just came in from our walk around the neighborhood. Mostly the same route every day, unless it's icy. No ice on the sidewalks but still a hint of frost at 9AM. I broke down yesterday and started the baseboard heaters full time.
    I made soup yesterday in my Instant Pot -- my version of a red lentil curry soup. I added in some cooked chicken that needed to be used and half a can of white beans. Yum. And the best ---dinner is cooked for the next two nights.

    1. Gee, SJ...I don't think I have ever had a cheering section before. :)

      Glad the weather there is nice enough for Mr Dog's daily walk. Are you old enough to remember neighborhoods before television and computers? On warm summer evenings half the neighbors would be going for walks after supper or visiting on front porches. And the kids would be playing games or riding their bikes up and down the street. Good times.

      Your soup sounds really good. And I am right there with you on making enough for a couple of meals. I think I could live on soup or stew most of the winter. I need to get busy and make up some cornbread muffins to freeze to go with the soup.

      Today's high temp was 28 degrees. We may see a 40 degree day later in the week, but I won't count on it. I wish I had a wood burning stove...

    2. I very much miss having a fireplace or wood burning stove. Funny - when I lived in WA state, both apartments had two heating sources.One being an electric baseboard heater and the other a wood burning fireplace. Wish my place here had that.
      Yes, I definitely remember when computers came in. And buying my first one in grad school. TV-- I remember when we got a color set. And the tubes. I'll be 62 on my next birthday.
